- 2 ripe avocados, halved and pitted
- 2 cups vegetable broth
- 1 cup coconut milk
- 1/4 cup fresh lime juice
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro leaves, for garnish
- Lime wedges, for serving
Instructions
- In a blender, combine the avocados, vegetable broth, coconut milk, lime juice, garlic, salt, and black pepper.
- Blend until smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if necessary.
- Chill the soup in the refrigerator for at least 30 minutes before serving.
- Serve in bowls, garnished with fresh cilantro leaves and lime wedges.
Notes
- For a spicier version, add a sliced jalapeño to the blender.
