Ingredients

  • 2 large oranges, peeled and segmented
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions

  1. Slice the roasted beets into thin rounds or wedges.
  2. In a large bowl, combine the sliced beets, orange segments, and red onion.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the beet and orange mixture and toss gently to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
