- 4 medium beets, roasted and peeled
- 2 large oranges, peeled and segmented
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions
- Slice the roasted beets into thin rounds or wedges.
- In a large bowl, combine the sliced beets, orange segments, and red onion.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the beet and orange mixture and toss gently to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Top with crumbled feta cheese and fresh mint leaves just before serving.
Notes
- For added flavor, consider adding toasted nuts such as walnuts or pecans.
