Description
A refreshing chilled soup made with honeydew melon and mint, perfect for hot summer days.
Ingredients

- 1 Honeydew melon (peeled, seeded, and cubed)
- 1/4 cup Fresh mint leaves (packed)
- 2 tablespoons Lime juice (freshly squeezed)
- 2 tablespoons Honey (or to taste)
- 1 cup Coconut milk (unsweetened)
- 1/4 teaspoon Salt (to taste)
Instructions
- In a blender, combine the honeydew melon, fresh mint leaves, lime juice, honey, and coconut milk.
- Blend until smooth and creamy.
- Taste and add salt as needed, adjusting sweetness with more honey if desired.
- Chill the soup in the refrigerator for at least 1 hour before serving.
- Serve cold, garnished with additional mint leaves if desired.
