A refreshing chilled strawberry soup perfect for warm days, made with fresh strawberries and a hint of citrus.

- 2 cups fresh strawberries, hulled and sliced
- 1 cup apple juice or orange juice
- 1 tablespoon honey or agave syrup (optional)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup plain yogurt or coconut yogurt (for serving)
- Fresh mint leaves for garnish (optional)
Instructions
- In a blender, combine the sliced strawberries, apple juice (or orange juice), honey (if using), lemon juice, and vanilla extract.
- Blend until smooth. If you prefer a chunkier texture, pulse a few times instead of blending completely.
- Taste and adjust sweetness if necessary by adding more honey or agave syrup.
- Chill the soup in the refrigerator for at least 1 hour before serving.
- Serve in bowls and top with a dollop of yogurt and fresh mint leaves, if desired.
Notes
- For a creamier texture, you can add more yogurt or a splash of heavy cream.
- This soup can be made a day ahead; just keep it covered in the refrigerator.
