Description
A refreshing and flavorful chilled Thai peanut noodle salad, perfect for a light meal or side dish. This salad combines rice noodles, crunchy vegetables, and a creamy peanut dressing.

- 8 ounces rice noodles
- 1 cup shredded carrots
- 1 cup bell peppers, sliced
- 1 cup cucumber, thinly sliced
- 1/2 cup red cabbage, shredded
- 1/4 cup green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey or maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- 1–2 tablespoons water (to thin dressing if needed)
- Crushed peanuts and lime wedges for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked noodles, carrots, bell peppers, cucumber, red cabbage, green onions, and cilantro.
- In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, lime juice, and water until smooth. Adjust consistency with more water if necessary.
- Pour the peanut dressing over the noodle salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve chilled, garnished with crushed peanuts and lime wedges.
Notes
- Feel free to add or substitute your favorite vegetables.
- For a spicier kick, add some crushed red pepper flakes to the dressing.
