  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 12 tablespoons water (to thin dressing if needed)
  • Crushed peanuts and lime wedges for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked noodles, carrots, bell peppers, cucumber, red cabbage, green onions, and cilantro.
  3. In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, lime juice, and water until smooth. Adjust consistency with more water if necessary.
  4. Pour the peanut dressing over the noodle salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
