  • 1/2 teaspoon black pepper
  • 1/2 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped (optional)
  • 4 hard-boiled eggs, chopped (optional)

Instructions

  1. 1. In a large pot, cover the potatoes with water and add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 10-15 minutes.
  2. 2. Drain the potatoes and let them cool slightly in a large bowl.
  3. 3. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper.
