- 2 pounds red potatoes, washed and cut into bite-sized pieces
- 1 cup mayonnaise

- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh dill, chopped (optional)
- 4 hard-boiled eggs, chopped (optional)
Instructions
- 1. In a large pot, cover the potatoes with water and add a pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 10-15 minutes.
- 2. Drain the potatoes and let them cool slightly in a large bowl.
- 3. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper.
- 4. Pour the dressing over the warm potatoes and gently mix to coat evenly.
- 5. Add the chopped celery, red onion, dill, and hard-boiled eggs (if using) to the potato mixture and stir gently until combined.
- 6. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- 7. Serve chilled or at room temperature, garnished with additional dill if desired.
Notes
- For a tangier flavor, increase the apple cider vinegar to taste.
