Ingredients

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a medium pot, bring water to a boil. Add orzo and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
