A refreshing and zesty cold lemon orzo salad, perfect for picnics or as a side dish.
Ingredients

- 1 cup orzo pasta
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- In a medium pot, bring water to a boil. Add orzo and cook according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
- Pour the dressing over the orzo salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or olives for added flavor.
- This salad can be made a day in advance for a quick meal prep option.
