A refreshing and flavorful cold sesame noodle salad that’s perfect for a light lunch or as a side dish. This dish is packed with fresh vegetables and a creamy sesame dressing, making it both nutritious and delicious.


Ingredients

  • 8 ounces of spaghetti or soba noodles
  • 1 cup of shredded carrots
  • 1 cup of cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup of green onions, sliced
  • 1/4 cup of sesame seeds, toasted
  • 1/4 cup of creamy peanut butter
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 tablespoon of honey or maple syrup
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled noodles, carrots, cucumber, bell pepper, and green onions.
  3. In a separate small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until smooth.
  4. Pour the dressing over the noodle and vegetable mixture. Toss to combine until everything is well coated.
  5. Sprinkle with toasted sesame seeds and season with salt and pepper to taste.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving for a colder dish.

Notes

  • Feel free to add other vegetables like edamame or snap peas for extra crunch.
