Description
A refreshing and flavorful cold sesame noodle salad that’s perfect for a light lunch or as a side dish. This dish is packed with fresh vegetables and a creamy sesame dressing, making it both nutritious and delicious.

- 8 ounces of spaghetti or soba noodles
- 1 cup of shredded carrots
- 1 cup of cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1/4 cup of green onions, sliced
- 1/4 cup of sesame seeds, toasted
- 1/4 cup of creamy peanut butter
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sesame oil
- 1 tablespoon of honey or maple syrup
- 1 teaspoon of garlic, minced
- 1 teaspoon of ginger, grated
- Salt and pepper to taste
Instructions
- Cook the noodles according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled noodles, carrots, cucumber, bell pepper, and green onions.
- In a separate small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until smooth.
- Pour the dressing over the noodle and vegetable mixture. Toss to combine until everything is well coated.
- Sprinkle with toasted sesame seeds and season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for 30 minutes before serving for a colder dish.
Notes
- Feel free to add other vegetables like edamame or snap peas for extra crunch.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
