- 12 ounces pasta (penne or fettuccine recommended)
- 2 large roasted red peppers, peeled and sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a blender, combine the roasted red peppers, garlic, and heavy cream. Blend until smooth.
- In a large skillet, heat olive oil over medium heat. Pour in the red pepper mixture and simmer for about 5 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper. Cook until the cheese is melted and the sauce is heated through.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Serve hot, garnished with fresh basil.
