Deliciously crispy air fryer chicken breast served alongside vibrant grilled peppers and a zesty lemon aioli.

- 2 Chicken breasts (boneless, skinless)
- 2 tablespoons Olive oil
- 1 teaspoon Paprika
- 1 teaspoon Garlic powder
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 Bell peppers (assorted colors)
- 1 Lemon (juiced)
- 1/2 cup Mayonnaise
- 1 clove Fresh garlic (minced)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a small bowl, mix olive oil, paprika, garlic powder, salt, and black pepper.
- Brush the mixture over both sides of the chicken breasts.
- Place the chicken in the air fryer basket and cook for 15-20 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
- While the chicken is cooking, slice the bell peppers into strips.
- Toss the peppers in olive oil and a pinch of salt, then grill them on a stovetop grill pan over medium heat until tender and slightly charred.
- In another bowl, combine lemon juice, mayonnaise, and minced garlic to make the lemon aioli.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Serve the sliced chicken breast with grilled peppers on the side, drizzled with lemon aioli.
Notes
- For extra flavor, marinate the chicken in the spice mixture for a few hours before cooking.
- Feel free to add other vegetables to grill, such as zucchini or onions.
- Adjust the amount of garlic in the aioli based on your taste preference.
