A refreshing salad packed with crispy chickpeas, fresh vegetables, and a zesty dressing.
Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups mixed greens (spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the seasoned chickpeas onto a baking sheet in a single layer.
- Bake for 25-30 minutes, or until crispy and golden brown, stirring halfway through.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
- In a small bowl, whisk together the lemon juice and balsamic vinegar. Drizzle over the salad and toss to combine.
- Once the chickpeas are done, let them cool slightly, then add them to the salad.
- Serve immediately and enjoy!
