Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the seasoned chickpeas onto a baking sheet in a single layer.
  4. Bake for 25-30 minutes, or until crispy and golden brown, stirring halfway through.
  5. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  6. In a small bowl, whisk together the lemon juice and balsamic vinegar. Drizzle over the salad and toss to combine.
  7. Once the chickpeas are done, let them cool slightly, then add them to the salad.
