Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 radish, thinly sliced
  • Soy sauce, for drizzling
  • Sesame seeds, for garnish
  • Green onions, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let sit, covered, for 10 minutes.
  3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and fluff with a fork.
  4. While the rice is resting, heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and cook for about 4-5 minutes per side, or until cooked through and crispy on the outside.
  5. In a large bowl, divide the rice evenly. Top each bowl with the crispy salmon, avocado slices, cucumber, carrot, and radish.
  6. Drizzle with soy sauce and sprinkle with sesame seeds and green onions before serving.

Notes

  • For added flavor, marinate salmon in soy sauce for 15 minutes before cooking.
