- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 salmon fillets
- 1 tablespoon olive oil
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1 carrot, julienned
- 1 radish, thinly sliced
- Soy sauce, for drizzling
- Sesame seeds, for garnish
- Green onions, for garnish
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let sit, covered, for 10 minutes.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and fluff with a fork.
- While the rice is resting, heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and cook for about 4-5 minutes per side, or until cooked through and crispy on the outside.
- In a large bowl, divide the rice evenly. Top each bowl with the crispy salmon, avocado slices, cucumber, carrot, and radish.
- Drizzle with soy sauce and sprinkle with sesame seeds and green onions before serving.
Notes
- For added flavor, marinate salmon in soy sauce for 15 minutes before cooking.
