- 1 large cucumber, peeled and sliced
- 1 cup fresh lemon juice (about 4–6 lemons)
- 1/2 cup granulated sugar (adjust to taste)
- 4 cups cold water
- Ice cubes
- Fresh mint leaves for garnish (optional)
Instructions
- In a blender, combine the sliced cucumber, lemon juice, and sugar.
- Blend until smooth and well combined.
- Strain the mixture through a fine mesh sieve into a pitcher to remove the pulp.
- Add the cold water to the pitcher and stir to combine.
- Taste and adjust sweetness if needed by adding more sugar.
- Serve over ice and garnish with fresh mint leaves if desired.
Notes
- For a more intense cucumber flavor, let the mixture chill in the fridge for an hour before serving.
- You can substitute honey or agave syrup for sugar if preferred.
