  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
  2. In a large pot, heat oil over medium heat. Add cumin seeds and let them sizzle.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in ginger-garlic paste and cook for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften.
  6. Mix in the mixed vegetables, turmeric powder, garam masala, and salt. Cook for 5 minutes.
  7. Add the soaked rice and 4 cups of water. Bring to a boil, then reduce heat to low and cover.
  8. Cook for 15-20 minutes, or until rice is tender and water is absorbed.
  9. Fluff the rice with a fork and garnish with fresh cilantro before serving.
