Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups baby potatoes, halved
  • 3 cups carrots, cut into 1-inch pieces
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 tablespoons cornstarch (optional, for thickening gravy)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper on all sides.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast for 4-5 minutes on each side until browned. Remove the roast and set aside.
  4. In the same pot, add onions and garlic. Sauté for 2-3 minutes until softened.
  5. Add the potatoes and carrots to the pot, stirring to combine.
  6. Pour in the beef broth, red wine, Worcestershire sauce, thyme, rosemary, and bay leaf. Mix well.
  7. Return the chuck roast to the pot, nestling it among the vegetables.
  8. Cover the Dutch oven with a lid and place it in the preheated oven. Cook for 3-4 hours, or until the meat is fork-tender.
  9. Once cooked, remove the roast and vegetables from the pot. If desired, make a slurry with cornstarch and a little cold water, then stir it into the cooking liquid to thicken the gravy.
  10. Serve the chuck roast sliced with the baby potatoes, carrots, and rich gravy poured over top.

Notes

  • For best results, use a heavy-bottomed Dutch oven for even cooking.
  • Feel free to add other vegetables like parsnips or celery for extra flavor.
  • Leftover roast can be stored in an airtight container in the refrigerator for up to 3 days.
