- 4 salmon fillets (skin on or off, your preference)
- 2 tablespoons olive oil (for drizzling)

- 2 pounds potatoes (Yukon Gold or red potatoes work well)
- 4 tablespoons butter (melted)
- 1/4 cup fresh dill (chopped for garnish)
- 1/2 cup sour cream
- 2 tablespoons lemon juice (freshly squeezed)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. Once cool enough to handle, place each potato on a baking sheet and gently smash them down with a fork or potato masher.
- Drizzle the smashed potatoes with melted butter and season with salt and pepper. Bake in the preheated oven for about 20-25 minutes until crispy and golden brown.
- While the potatoes are baking, prepare the salmon. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and garlic powder.
- Bake the salmon in the oven for about 12-15 minutes, or until the salmon flakes easily with a fork.
- For the dill sauce, in a small bowl, combine sour cream, lemon juice, and chopped dill. Mix well and season with salt to taste.
- Once everything is cooked, serve the baked salmon alongside the crispy smashed potatoes. Drizzle the dill sauce over the salmon and garnish with additional dill if desired.
