  • 4 salmon fillets (skin on or off, your preference)
  • 2 tablespoons olive oil (for drizzling)

  • 1 teaspoon garlic powder
  • 2 pounds potatoes (Yukon Gold or red potatoes work well)
  • 4 tablespoons butter (melted)
  • 1/4 cup fresh dill (chopped for garnish)
  • 1/2 cup sour cream
  • 2 tablespoons lemon juice (freshly squeezed)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly. Once cool enough to handle, place each potato on a baking sheet and gently smash them down with a fork or potato masher.
  4. Drizzle the smashed potatoes with melted butter and season with salt and pepper. Bake in the preheated oven for about 20-25 minutes until crispy and golden brown.
  5. While the potatoes are baking, prepare the salmon. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and garlic powder.
  6. Bake the salmon in the oven for about 12-15 minutes, or until the salmon flakes easily with a fork.
  7. For the dill sauce, in a small bowl, combine sour cream, lemon juice, and chopped dill. Mix well and season with salt to taste.
  8. Once everything is cooked, serve the baked salmon alongside the crispy smashed potatoes. Drizzle the dill sauce over the salmon and garnish with additional dill if desired.
