Description

This easy crockpot recipe features tender boneless chicken breasts cooked to perfection and served over fluffy white rice, making it a hassle-free meal for any day of the week.


Ingredients

  • 4 pieces Boneless chicken breasts
  • 1 cup Chicken broth
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • 2 cups White rice
  • 4 cups Water

Instructions

  1. In a small bowl, mix together garlic powder, onion powder, salt, and black pepper.
  2. Rub the seasoning mixture evenly over the boneless chicken breasts.
  3. Heat the vegetable oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until browned.
  4. Transfer the chicken breasts to the crockpot and pour the chicken broth over them.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
  6. About 30 minutes before the chicken is done, rinse the white rice under cold water until the water runs clear.
  7. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is fluffy and the water is absorbed.
  8. Once the chicken is cooked, shred it with two forks and serve over the fluffy rice.
