- 4 pieces Boneless chicken breasts
- 1 cup Chicken broth
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 tablespoon Vegetable oil
- 2 cups White rice
- 4 cups Water
Instructions
- In a small bowl, mix together garlic powder, onion powder, salt, and black pepper.
- Rub the seasoning mixture evenly over the boneless chicken breasts.
- Heat the vegetable oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until browned.
- Transfer the chicken breasts to the crockpot and pour the chicken broth over them.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
- About 30 minutes before the chicken is done, rinse the white rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is fluffy and the water is absorbed.
- Once the chicken is cooked, shred it with two forks and serve over the fluffy rice.
