Description

A delicious and easy recipe for teriyaki chicken cooked in a crockpot and served with fluffy steamed rice.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, combine teriyaki sauce, soy sauce, brown sugar, honey, garlic, ginger, sesame oil, and black pepper.
  2. Place the chicken thighs in the crockpot and pour the sauce mixture over the chicken.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken with two forks and stir to coat with the sauce.
  5. While the chicken is cooking, rinse the jasmine rice under cold water until the water runs clear.
  6. In a pot, combine rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is fluffy and water is absorbed.
  7. Serve the teriyaki chicken over the fluffy rice, garnished with chopped green onions and sesame seeds.
