This easy keto cabbage lasagna is a delicious low-carb alternative to traditional lasagna. Packed with flavor and satisfying, it’s perfect for a healthy weeknight dinner.


Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef or sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce (sugar-free for keto)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring water to a boil. Cut the cabbage into quarters and remove the core. Carefully boil the cabbage quarters for about 5 minutes, or until the leaves are tender but still hold their shape. Drain, cool, and separate the leaves.
  3. In a large skillet, brown the ground beef or sausage over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent. Stir in the marinara sauce, oregano, basil, salt, and pepper. Simmer for about 10 minutes.
  4. In a bowl, combine ricotta cheese, egg, and half of the grated Parmesan. Mix well.
  5. In a 9×13 inch baking dish, spread a layer of the meat sauce on the bottom. Place a layer of cabbage leaves over the sauce, then spread a layer of the ricotta mixture, followed by a layer of mozzarella cheese. Repeat the layers until all ingredients are used, finishing with the meat sauce and topping with the remaining mozzarella and Parmesan cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  7. Let cool for 10 minutes before slicing and serving.

Notes

  • For a vegetarian version, substitute the meat with vegetables like mushrooms or zucchini.
  • You can also add spinach or kale for extra nutrition.
  • Make sure to use sugar-free marinara sauce to keep it keto-friendly.
