Cool off this summer with these delicious desserts that require almost no baking. Perfect for hot days when you want something sweet without heating up the kitchen.
Ingredients

- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 package (12 oz) graham crackers
- 1/2 cup yogurt (plain or flavored)
- Mint leaves for garnish (optional)
Instructions
- In a large bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract to the whipped cream and continue to whip until stiff peaks form.
- In a separate bowl, mix the yogurt and half of the mixed berries together.
- To assemble, layer graham crackers at the bottom of a serving dish.
- Spread a layer of the yogurt and berry mixture over the graham crackers.
- Add a layer of whipped cream on top of the yogurt layer.
- Repeat the layers until all ingredients are used, finishing with a layer of whipped cream.
- Top with the remaining mixed berries and garnish with mint leaves if desired.
- Refrigerate for at least 2 hours before serving to allow the graham crackers to soften.
Notes
- You can use any combination of fruits you prefer.
- For a chocolate version, add cocoa powder to the whipped cream or use chocolate pudding instead of yogurt.
