Ingredients

  • 4 cups Zucchini Noodles
  • 2 cups Cherry Tomatoes
  • 1 cup Feta Cheese
  • 3 tablespoons Olive Oil
  • 1/4 cup Fresh Basil

  • to taste Black Pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, salt, pepper, and chopped basil.
  3. Marinate the chicken pieces in the olive oil mixture for at least 30 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until cooked through.
  5. While the chicken is grilling, spiralize the zucchini into noodles.
  6. In a large skillet, sauté the zucchini noodles and cherry tomatoes for 2-3 minutes.
  7. Once the chicken is done, slice it and serve it over the zucchini noodles.
  8. Top with crumbled feta cheese and additional basil if desired.
