- 1 lb chicken breast, diced
- 2 cups mixed bell peppers, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning

- 4 whole wheat tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, paprika, and Italian seasoning. Cook until the chicken is fully cooked, about 5-7 minutes.
- Add the sliced bell peppers, onion, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5 minutes.
- Warm the tortillas in a separate pan or microwave until soft.
- Assemble the wraps by placing a portion of the chicken and vegetable mixture on each tortilla. Top with shredded cheese and fresh cilantro if desired.
- Roll the tortillas tightly and serve immediately. Enjoy your easy summer dinner!
