  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

  • Cooking spray

Instructions

  1. Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
  2. Preheat your air fryer to 375°F (190°C).
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, garlic powder, and Italian seasoning.
  4. Dredge each eggplant slice in flour, dip it in the beaten eggs, then coat it in the breadcrumb mixture. Press the breadcrumbs onto the eggplant to ensure they stick.
  5. Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with cooking spray.
  6. Air fry the eggplant for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  7. In a baking dish, layer half of the fried eggplant slices, half of the marinara sauce, half of the mozzarella, and half of the Parmesan cheese. Repeat with the remaining ingredients.
  8. Air fry the layered eggplant parmesan at 375°F (190°C) for an additional 5-7 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh basil if desired, and serve hot.
