- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese

Instructions
- Sprinkle salt over the eggplant slices and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
- Preheat your air fryer to 375°F (190°C).
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, garlic powder, and Italian seasoning.
- Dredge each eggplant slice in flour, dip it in the beaten eggs, then coat it in the breadcrumb mixture. Press the breadcrumbs onto the eggplant to ensure they stick.
- Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Air fry the eggplant for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- In a baking dish, layer half of the fried eggplant slices, half of the marinara sauce, half of the mozzarella, and half of the Parmesan cheese. Repeat with the remaining ingredients.
- Air fry the layered eggplant parmesan at 375°F (190°C) for an additional 5-7 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil if desired, and serve hot.
Notes
- For a healthier version, use whole wheat breadcrumbs.
- Feel free to add other vegetables like zucchini or mushrooms for added flavor.
