Description
A classic French Dip Sandwich featuring tender, slow-cooked beef served on a crusty roll with a side of savory au jus for dipping.

- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 hoagie rolls
- 1 cup provolone cheese, sliced
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned. Remove from skillet and set aside.
- In the same skillet, add sliced onion and cook until softened. Add minced garlic and cook for another minute.
- Transfer the onions and garlic to a slow cooker. Place the seared beef on top, then add beef broth, Worcestershire sauce, dried thyme, and additional salt and pepper to taste.
- Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
- Once cooked, remove the beef from the slow cooker and let it rest for a few minutes before shredding.
- Strain the broth into a saucepan, discarding solids. Heat the broth over medium heat until hot.
- Slice the hoagie rolls in half and layer shredded beef and provolone cheese on the bottom half of each roll.
- Place the sandwiches under the broiler until the cheese is melted and bubbly.
- Serve the sandwiches with a small bowl of hot beef broth for dipping. Garnish with fresh parsley if desired.
Notes
- For extra flavor, you can add sliced mushrooms to the slow cooker along with the onions.
- If you prefer a thicker au jus, you can mix a cornstarch slurry into the broth while heating.
