- 1 cup water

- 1 packet of gelatin (or agar-agar for a vegetarian option)

Instructions
- In a small saucepan, combine honey, water, lemon juice, and salt. Heat over medium heat until the mixture is warm but not boiling.
- In a separate bowl, sprinkle gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom.
- Once the honey mixture is warm, remove it from heat and stir in the bloomed gelatin until fully dissolved.
- Add vanilla extract and stir well to combine.
- Pour the mixture into a mold or individual serving cups.
- Freeze for at least 4 hours, or until fully set.
- To serve, remove from the mold and enjoy as a refreshing dessert.
