Instructions

  1. In a small saucepan, combine honey, water, lemon juice, and salt. Heat over medium heat until the mixture is warm but not boiling.
  2. In a separate bowl, sprinkle gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom.
  3. Once the honey mixture is warm, remove it from heat and stir in the bloomed gelatin until fully dissolved.
  4. Add vanilla extract and stir well to combine.
  5. Pour the mixture into a mold or individual serving cups.
  6. Freeze for at least 4 hours, or until fully set.
