Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup (adjust for sweetness)
  • 1 teaspoon vanilla extract
  • Juice of 1 lemon

Instructions

  1. In a blender, combine the strawberries, Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice.
  2. Blend until smooth and creamy. Taste and adjust sweetness if necessary.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert the popsicle sticks and freeze for at least 4-6 hours, or until completely solid.
  5. To remove the popsicles, run warm water over the outside of the molds for a few seconds.
