- 2 medium eggplants, sliced into 1/2 inch thick rounds
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon balsamic vinegar (optional)
- Fresh basil for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the olive oil, salt, black pepper, garlic powder, oregano, and balsamic vinegar.
- Add the eggplant slices to the bowl and toss to coat evenly with the marinade.
- Let the eggplant marinate for at least 15 minutes to absorb the flavors.
- Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until grill marks appear and the eggplant is tender.
- Remove from the grill and let cool slightly.
- Garnish with fresh basil if desired, and serve warm.
