- 1 block of halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Preheat your grill to medium-high heat.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a large bowl, combine the halloumi cubes, bell pepper, zucchini, red onion, and cherry tomatoes.
- Drizzle the olive oil over the mixture, then sprinkle with oregano, salt, and pepper. Toss gently to coat the vegetables and halloumi evenly.
- Thread the halloumi and vegetables onto the skewers, alternating between the cheese and vegetables.
- Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the halloumi is golden brown and the vegetables are tender.
- Remove from the grill and serve immediately.
Notes
- For added flavor, marinate the skewers in the olive oil and oregano mixture for 30 minutes before grilling.
