Deliciously marinated and grilled Portobello mushrooms, perfect for a hearty vegetarian meal.


Ingredients

  • 4 large Portobello mushrooms, cleaned and stems removed
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and black pepper to create the marinade.
  2. Place the cleaned Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure they are well coated. Let them marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the mushrooms from the marinade, allowing excess to drip off. Reserve the marinade for basting.
  5. Place the mushrooms on the grill, gill side down. Grill for about 5-7 minutes.
  6. Flip the mushrooms over, baste with the reserved marinade, and grill for another 5-7 minutes or until tender and juicy.
  7. Remove from the grill and let rest for a couple of minutes. Garnish with fresh parsley before serving.

Notes

  • For added flavor, try marinating the mushrooms overnight.
  • These mushrooms can be served on their own, in a sandwich, or as a topping for salads.
