Deliciously marinated and grilled Portobello mushrooms, perfect for a hearty vegetarian meal.

- 4 large Portobello mushrooms, cleaned and stems removed
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and black pepper to create the marinade.
- Place the cleaned Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure they are well coated. Let them marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove the mushrooms from the marinade, allowing excess to drip off. Reserve the marinade for basting.
- Place the mushrooms on the grill, gill side down. Grill for about 5-7 minutes.
- Flip the mushrooms over, baste with the reserved marinade, and grill for another 5-7 minutes or until tender and juicy.
- Remove from the grill and let rest for a couple of minutes. Garnish with fresh parsley before serving.
Notes
- For added flavor, try marinating the mushrooms overnight.
- These mushrooms can be served on their own, in a sandwich, or as a topping for salads.
