- 4 pieces salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large mango, diced
- 1/4 cup red onion, diced
- 1 medium jalapeño, minced
- 1/4 cup cilantro, chopped
- 1 large lime, juiced
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
- Brush the salmon fillets with the olive oil mixture.
- Place the salmon on the grill, skin-side down, and grill for 6-8 minutes on each side, or until the salmon flakes easily with a fork.
- While the salmon is grilling, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl.
- Once the salmon is cooked, remove it from the grill and top each fillet with the mango salsa.
