Ingredients

  • 1 medium zucchini, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium eggplant, sliced
  • 1/2 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices of ciabatta bread
  • 4 slices of mozzarella cheese
  • Fresh basil leaves

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. In a bowl, toss the sliced zucchini, red bell pepper, yellow bell pepper, eggplant, and mushrooms with olive oil, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and have nice grill marks.
  4. Assemble the panini by layering grilled vegetables, mozzarella cheese, and fresh basil between two slices of ciabatta bread.
  5. Brush the outside of the bread with olive oil.
  6. Grill the panini for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  7. Remove from the grill, slice, and serve warm.
