Ingredients

- 1 medium zucchini, sliced
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium eggplant, sliced
- 1/2 cup mushrooms, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of ciabatta bread
- 4 slices of mozzarella cheese
- Fresh basil leaves
Instructions
- Preheat your grill or grill pan over medium heat.
- In a bowl, toss the sliced zucchini, red bell pepper, yellow bell pepper, eggplant, and mushrooms with olive oil, salt, and pepper.
- Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and have nice grill marks.
- Assemble the panini by layering grilled vegetables, mozzarella cheese, and fresh basil between two slices of ciabatta bread.
- Brush the outside of the bread with olive oil.
- Grill the panini for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the grill, slice, and serve warm.
