- 2 medium zucchinis
- 2 tablespoons olive oil

- 1 cup cherry tomatoes, halved

- 1 teaspoon balsamic vinegar
Instructions
- Preheat the grill to medium-high heat.
- Using a vegetable peeler, create long ribbons of zucchini by peeling the zucchini lengthwise.
- Drizzle the zucchini ribbons with olive oil and season with salt and pepper.
- Place the zucchini ribbons on the grill and cook for about 2-3 minutes on each side until they have grill marks and are tender.
- Remove the zucchini from the grill and let them cool slightly.
- In a large bowl, combine the grilled zucchini ribbons, cherry tomatoes, basil, and feta cheese.
- In a small bowl, whisk together the lemon juice and balsamic vinegar.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to an hour before serving.
Notes
- For added flavor, marinate the zucchini ribbons in olive oil and herbs for 30 minutes before grilling.
- Feel free to add other vegetables or proteins to the salad, such as grilled bell peppers or chickpeas.
