Ingredients

  • 1 lb lean ground beef
  • 1 cup quinoa, rinsed
  • 2 cups low-sodium beef broth or water
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. In a medium saucepan, combine quinoa and beef broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat if necessary.
  3. Add diced bell peppers, tomatoes, black beans, chili powder, cumin, garlic powder, salt, and pepper to the skillet. Cook for an additional 5-7 minutes until the peppers are tender.
  4. To serve, spoon quinoa into bowls, top with the ground beef mixture, and garnish with avocado slices and fresh cilantro.
