- 1 lb lean ground beef
- 1 cup quinoa, rinsed
- 2 cups low-sodium beef broth or water
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1 can black beans, drained and rinsed
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- In a medium saucepan, combine quinoa and beef broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat if necessary.
- Add diced bell peppers, tomatoes, black beans, chili powder, cumin, garlic powder, salt, and pepper to the skillet. Cook for an additional 5-7 minutes until the peppers are tender.
- To serve, spoon quinoa into bowls, top with the ground beef mixture, and garnish with avocado slices and fresh cilantro.
Notes
- Feel free to add other vegetables such as spinach or corn for extra nutrients.
