Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the trimmed green beans to the skillet and toss to coat in the garlic butter. Sauté for 4-5 minutes or until the green beans are tender but still crisp.
  6. Drizzle the lemon juice over the green beans and season with salt and pepper to taste.
  7. Slice the cooked chicken and serve alongside the garlic butter green beans. Garnish with fresh parsley if desired.
