This healthy and easy weeknight dinner recipe features tender chicken breasts paired with sautéed garlic butter green beans, perfect for a quick and nutritious meal for two.

- 2 boneless, skinless chicken breasts
- 2 cups fresh green beans, trimmed
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper on both sides.
- Add the chicken to the skillet and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the trimmed green beans to the skillet and toss to coat in the garlic butter. Sauté for 4-5 minutes or until the green beans are tender but still crisp.
- Drizzle the lemon juice over the green beans and season with salt and pepper to taste.
- Slice the cooked chicken and serve alongside the garlic butter green beans. Garnish with fresh parsley if desired.
