- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced
- 1 cup (240ml) beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 cup (240ml) sour cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 8 oz (225g) egg noodles, cooked according to package instructions
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Brown the beef on all sides, then remove it from the skillet and set it aside.
- In the same skillet, add the chopped onion and sauté until translucent, about 3-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Add the sliced mushrooms to the skillet and cook until they are tender and browned, about 5-7 minutes.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and bring the mixture to a simmer.
- Return the browned beef to the skillet and simmer for about 5 minutes, allowing the flavors to meld.
- Reduce the heat to low and stir in the sour cream until well combined. Cook for an additional 2-3 minutes until heated through, but do not boil.
- Serve the beef stroganoff over cooked egg noodles and garnish with fresh parsley.

- For a richer flavor, consider using a combination of beef broth and red wine.
- Feel free to add a splash of heavy cream for extra creaminess.
