Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Water as needed

Instructions

  1. In a large mixing bowl, combine the flour and salt. Create a well in the center and crack in the eggs and olive oil.
  2. Using a fork, gradually incorporate the flour into the eggs until a rough dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic. If the dough is too dry, add a little water; if too sticky, add a bit more flour.
  4. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  5. After resting, divide the dough into 4 equal pieces. Keep the pieces you are not using covered to prevent drying out.
  6. Roll out each piece using a pasta machine or a rolling pin until it’s thin enough to see your hand through it (about 1/16 inch thick).
  7. Cut the rolled dough into sheets that fit your lasagna dish, about 3 inches wide and as long as desired.
  8. Boil salted water in a large pot. Cook the noodles for about 2-3 minutes until slightly softened but still firm; they will cook further in the oven.
  9. Drain the noodles and lay them flat on a clean towel or parchment paper to prevent sticking.
  10. Layer the noodles with your favorite sauce and fillings in a baking dish. Bake according to your lasagna recipe instructions.

Notes

  • Make sure to let the dough rest to relax the gluten for easier rolling.
  • Using a pasta machine will give you the best results for even thickness.
  • These noodles can be made ahead of time and frozen. Just ensure they are well-separated before freezing.
