- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup honey
- 1/2 cup honey butter (for serving)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, melted butter, eggs, and honey until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
- Serve warm with honey butter.
Notes
- For extra sweetness, you can drizzle more honey on top of the muffins before serving.
- These muffins can be stored in an airtight container at room temperature for up to 3 days.
