Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup honey butter (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, melted butter, eggs, and honey until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
  8. Serve warm with honey butter.

Notes

  • For extra sweetness, you can drizzle more honey on top of the muffins before serving.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days.
