  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cayenne pepper (optional)
  • Vegetable oil for frying
  • 1/2 cup unsalted butter
  • 1/2 cup honey

Instructions

  1. In a large bowl, combine buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add chicken pieces, making sure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
  2. In a separate bowl, whisk together flour, baking powder, and cayenne pepper (if using). Remove chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.
  3. In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry chicken in batches, cooking for about 15-18 minutes or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  4. Once cooked, transfer fried chicken to a wire rack to drain excess oil.
