Ingredients

- 1 medium honeydew melon, peeled, seeded, and cubed
- 6 ounces prosciutto, thinly sliced
- 1 cup arugula or mixed greens
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh mint leaves for garnish (optional)
Instructions
- In a large bowl, combine the cubed honeydew melon and arugula or mixed greens.
- Tear the prosciutto slices into smaller pieces and add them to the bowl.
- Sprinkle the feta cheese over the top of the salad.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and gently toss to combine.
- Garnish with fresh mint leaves if desired and serve immediately.
