Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are cool, take one cookie, scoop ice cream on the flat side, and top with another cookie, pressing down gently to form a sandwich.
- Repeat with remaining cookies and ice cream.
- Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
Notes
- Feel free to customize the ice cream flavors and add-ins like chocolate chips or sprinkles.
- Store ice cream sandwiches in the freezer for up to 2 weeks.
