  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.

  8. Once the cookies are cool, take one cookie, scoop ice cream on the flat side, and top with another cookie, pressing down gently to form a sandwich.
  9. Repeat with remaining cookies and ice cream.
  10. Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
