  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds potatoes
  • 2 tablespoons fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  3. Rub the mixture over the chicken breasts until well coated.
  4. Cut the potatoes into wedges and toss with olive oil, salt, pepper, and fresh herbs.
  5. Place the chicken breasts and potatoes on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
  7. Let the chicken rest for a few minutes before slicing. Serve with the roasted potatoes.
