- 4 pieces chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1.5 pounds potatoes
- 2 tablespoons fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine olive oil, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Rub the mixture over the chicken breasts until well coated.
- Cut the potatoes into wedges and toss with olive oil, salt, pepper, and fresh herbs.
- Place the chicken breasts and potatoes on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Let the chicken rest for a few minutes before slicing. Serve with the roasted potatoes.
