Juicy Lemon Chicken Breast with Garlic Butter Broccolini Magic

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 bunch broccolini
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon juice, garlic powder, onion powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the marinade over them, making sure they are well coated.
  4. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. While the chicken is baking, prepare the broccolini. In a large skillet over medium heat, melt the butter.
  6. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  7. Add the broccolini to the skillet, season with salt and pepper, and sauté for 5-7 minutes until bright green and tender.
  8. Once the chicken is done, let it rest for a few minutes before slicing.
  9. Serve the chicken breasts with garlic butter broccolini on the side, garnished with lemon slices and fresh parsley.

Notes

  • For extra flavor, marinate the chicken for 30 minutes to 1 hour before baking.
  • You can substitute broccolini with asparagus or green beans if desired.
