- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 bunch broccolini
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 lemon, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, lemon juice, garlic powder, onion powder, salt, and pepper.
- Place chicken breasts in a baking dish and pour the marinade over them, making sure they are well coated.
- Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken is baking, prepare the broccolini. In a large skillet over medium heat, melt the butter.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the broccolini to the skillet, season with salt and pepper, and sauté for 5-7 minutes until bright green and tender.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the chicken breasts with garlic butter broccolini on the side, garnished with lemon slices and fresh parsley.
Notes
- For extra flavor, marinate the chicken for 30 minutes to 1 hour before baking.
- You can substitute broccolini with asparagus or green beans if desired.
