Description

Ingredients

  • 1 lb lamb shoulder, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a large bowl, combine olive oil, lemon juice, garlic, rosemary, thyme, cumin, smoked paprika, salt, and pepper.
  2. Add the lamb cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated lamb onto skewers, leaving a little space between each piece.
  6. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the lamb is nicely charred and reaches your desired doneness.
  7. Remove from the grill and let rest for a few minutes before serving.
