These juicy lamb skewers are marinated to perfection, grilled to a smoky finish, and served with a delicious dipping sauce.

- 1 lb lamb shoulder, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a large bowl, combine olive oil, lemon juice, garlic, rosemary, thyme, cumin, smoked paprika, salt, and pepper.
- Add the lamb cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb onto skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the lamb is nicely charred and reaches your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- Feel free to add vegetables like bell peppers or onions to the skewers for extra flavor and color.
- You can also broil the skewers in the oven if you don’t have a grill.
