Ingredients

  • 1 3/4 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1/4 cup Powdered sugar
  • 1/2 cup Unsalted butter
  • 4 large Eggs
  • 1/2 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour and salt, mixing until just combined to form the crust.
  4. Press the crust mixture into the bottom of the prepared baking pan, and bake for 15-20 minutes, or until lightly golden.
  5. In another bowl, whisk together the eggs, lemon juice, lemon zest, powdered sugar, and baking powder until smooth.
  6. Pour the lemon filling over the baked crust and return to the oven.
  7. Bake for an additional 20-25 minutes, or until the filling is set and slightly golden on top.
  8. Let cool completely in the pan before slicing into bars.
  9. Dust with powdered sugar before serving, if desired.

Notes

  • For a stronger lemon flavor, increase the lemon zest.
  • These bars can be stored in an airtight container in the refrigerator for up to a week.
