These classic lemon bars feature a buttery shortbread crust and a tangy lemon filling, perfect for a sweet and tart treat.

- 1 3/4 cups All-purpose flour
- 1 cup Granulated sugar
- 1/4 cup Powdered sugar
- 1/2 cup Unsalted butter
- 4 large Eggs
- 1/2 cup Fresh lemon juice
- 1 tablespoon Lemon zest
- 1/2 teaspoon Baking powder
- 1/4 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour and salt, mixing until just combined to form the crust.
- Press the crust mixture into the bottom of the prepared baking pan, and bake for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, lemon juice, lemon zest, powdered sugar, and baking powder until smooth.
- Pour the lemon filling over the baked crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set and slightly golden on top.
- Let cool completely in the pan before slicing into bars.
- Dust with powdered sugar before serving, if desired.
Notes
- For a stronger lemon flavor, increase the lemon zest.
- These bars can be stored in an airtight container in the refrigerator for up to a week.
