A refreshing and nutritious breakfast option, these Lemon Blueberry Overnight Oats are easy to prepare and packed with flavor.
Ingredients

- 1 cup rolled oats
- 1 cup almond milk (or any milk of choice)
- 1/2 cup Greek yogurt
- 1 tablespoon honey or maple syrup (optional)
- Zest of 1 lemon
- Juice of 1 lemon
- 1 cup fresh blueberries
- 1/4 teaspoon salt
Instructions
- In a medium bowl, combine rolled oats, almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and salt. Stir until well combined.
- Fold in the fresh blueberries.
- Divide the mixture evenly into two jars or containers with lids.
- Seal the jars and refrigerate overnight, or for at least 4 hours.
- In the morning, give the oats a good stir and add more milk if desired. Top with additional blueberries and lemon zest before serving.
Notes
- You can substitute any non-dairy milk for this recipe.
- For added sweetness, adjust the amount of honey or maple syrup to your taste.
- These oats can be stored in the refrigerator for up to 3 days.
