Ingredients

  • 1 cup almond milk (or any milk of choice)
  • 1/2 cup Greek yogurt
  • 1 tablespoon honey or maple syrup (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup fresh blueberries
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, combine rolled oats, almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and salt. Stir until well combined.
  2. Fold in the fresh blueberries.
  3. Divide the mixture evenly into two jars or containers with lids.
  4. Seal the jars and refrigerate overnight, or for at least 4 hours.
  5. In the morning, give the oats a good stir and add more milk if desired. Top with additional blueberries and lemon zest before serving.
