  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup heavy cream
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and ice water until the dough comes together. Press the dough into a tart pan and prick the bottom with a fork.
  4. Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and let it cool.
  5. In a medium bowl, whisk together the sugar, lemon juice, eggs, and lemon zest until well combined.
  6. Stir in the heavy cream until smooth. Pour the lemon filling into the cooled tart crust.
  7. Bake for an additional 20-25 minutes or until the filling is set but still slightly jiggly in the center.
  8. Allow the tart to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  9. Dust with powdered sugar before slicing and serving.
