- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 2 tablespoons ice water
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 3 large eggs
- 1 tablespoon lemon zest
- 1/4 cup heavy cream
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and ice water until the dough comes together. Press the dough into a tart pan and prick the bottom with a fork.
- Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and let it cool.
- In a medium bowl, whisk together the sugar, lemon juice, eggs, and lemon zest until well combined.
- Stir in the heavy cream until smooth. Pour the lemon filling into the cooled tart crust.
- Bake for an additional 20-25 minutes or until the filling is set but still slightly jiggly in the center.
- Allow the tart to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
- Dust with powdered sugar before slicing and serving.
