  • 1 cup cooked breakfast sausage, crumbled
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Sour cream and salsa for serving

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Add the diced onions and bell peppers, cooking until soft.
  3. Add the crumbled sausage to the skillet and stir until heated through.
  4. Pour the egg mixture into the skillet and scramble until fully cooked.
  5. Lay a tortilla flat and sprinkle half with shredded cheese. Top with the scrambled egg mixture and fold the tortilla over.
  6. Cook the quesadilla in the skillet for 2-3 minutes on each side until golden brown and the cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve with sour cream and salsa.
