- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cooked breakfast sausage, crumbled
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- Sour cream and salsa for serving
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add the diced onions and bell peppers, cooking until soft.
- Add the crumbled sausage to the skillet and stir until heated through.
- Pour the egg mixture into the skillet and scramble until fully cooked.
- Lay a tortilla flat and sprinkle half with shredded cheese. Top with the scrambled egg mixture and fold the tortilla over.
- Cook the quesadilla in the skillet for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa.
