Deliciously cheesy and meaty, these loaded nachos feature tender birria beef topped with all your favorite nacho toppings.

- 1 lb birria beef, cooked and shredded
- 8 oz tortilla chips
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 cup refried beans
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1 avocado, sliced
- 1/4 cup pickled red onions
- 1/4 cup birria consomé (for drizzling)
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the tortilla chips evenly on a large baking sheet.
- Layer the refried beans over the tortilla chips.
- Add the shredded birria beef on top of the beans.
- Sprinkle the shredded cheese generously over the beef.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, jalapeños, cilantro, sour cream, avocado, and pickled red onions.
- Drizzle with birria consomé before serving.
