- 2 cups tortilla chips
- 1 cup corn, cooked (frozen or fresh)
- 1/2 cup cotija cheese, crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 cup chopped cilantro
- 1 jalapeño, sliced (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the tortilla chips evenly on a baking sheet.
- In a bowl, mix together the corn, cotija cheese, cheddar cheese, sour cream, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
- Pour the corn mixture evenly over the tortilla chips.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with chopped cilantro and jalapeño slices if using.
