  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked brown rice or quinoa for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add minced garlic and ginger, sauté for 1 minute until fragrant.
  3. Add the ground beef to the skillet, season with salt and pepper, and cook until browned, breaking it apart with a spoon.
  4. Stir in the sliced bell peppers, broccoli, and snap peas. Cook for 5-7 minutes, or until vegetables are tender-crisp.
  5. Pour in the soy sauce and stir to combine. Cook for an additional 1-2 minutes.
  6. Serve hot over cooked brown rice or quinoa, if desired.

Notes

  • For a spicier kick, add crushed red pepper flakes.
