- 1 lb lean ground beef (90% lean)
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add minced garlic and ginger, sauté for 1 minute until fragrant.
- Add the ground beef to the skillet, season with salt and pepper, and cook until browned, breaking it apart with a spoon.
- Stir in the sliced bell peppers, broccoli, and snap peas. Cook for 5-7 minutes, or until vegetables are tender-crisp.
- Pour in the soy sauce and stir to combine. Cook for an additional 1-2 minutes.
- Serve hot over cooked brown rice or quinoa, if desired.
Notes
- For a spicier kick, add crushed red pepper flakes.
- You can substitute any vegetables you prefer or have on hand.
- This recipe can easily be doubled for meal prep.
